Pada mata kuliah ini mahasiswa belajar teori dan praktek  mengembangkan potensi diri menjadi seorang bartender, mahasisva belajar membuat minuman beralkohol maupun non alcohol, memahami kategori minuman beralkohol, jenis minuman beralkohol, bagaimana tekhnik pengelolaan dan penyajian minumannya serta memahami fungsi alat  yang digunakan.

Pada mata Kuliah ini mahasiswa mempelajari pengetahuan pelayanan makanan dan minuman di restoran sebuah hotel berbintang. Selain pelayanan restoran, pada mata kuliah ini juga terdapat materi tentang room service, banquet dan steward. Penguasaan keterampilan dan sikap kerja yang dibutuhkan dipelajari terpisah ( DI Lab tata Hidangan pada saat Praktikum)
